Info: Derived from the Crocus sativus flower, saffron is from the Iridaceae family. It is the world's most prized spice - most expensive spice per ounce. Although it is native to southwest Asia, saffron was  first cultivated in Greece. Each crocus sativus bears up to four flowers, each containing three crimson stigmas. These stigmas are then dried and used in various cuisines as a coloring agent and as seasoning. There are 4,000 years of documentation illustrating the use of saffron medicinally.
