Usage: To get the vanilla seeds, slice the bean lengthwise. To substitute vanilla extract, one inch of the bean is equivalent to a teaspoon of extract. Try adding the beans in sauces, souffles, shellfish, chicken, veal, and dairy dishes.
Info: Vanilla beans comes from orchids of genus Vanilla. "Vanilla" is from the Spanish vania meaning little pod or sheath. The have been multiple attempts to cultivate it worldwide, but only Mexican bees and hummingbirds can pollinate the flowers naturally. It was not until a 12 year old boy discovered that the plant could be hand pollinated in 1841.
Vanilla has a fruity and floral flavor, principally for ice cream, soft drinks, eggnogs, chocolate confectionery, candy, tobacco, baked goods, puddings, cakes, cookies, liqueurs, and as a fragrant ingredient in perfumery.
