Usage: Rosemary leaves can also be found in bouquet garni, herbs de provence blends, and tisane. It is widely used in Mediterranean cuisine. Rosemary adds a refreshing and pungent aroma to vinegars, salad dressings, lemonades, and breads. Sprinkle dried rosemary on top of pizza or mix with olive oil and garlic for lamb, poultry, and veal dishes.
Info: A symbol of remembrance, fidelity and love since the ancient times, rosemary is known in Latin as rosmarinus officinalis meaning "dew of the sea". This fragrant perennial herb needs very little water to live, just the sea breeze is sufficient. The Spanish believed that the rosemary shrub provided shelter for the Virgin Mary, hence the name for rosemary in Spanish are "Romero", "Rose of Mary", and "Pilgrim's flower". The Greek called it antos to mean flower. Studies have shown that the risk of cancer is reduced in laboratory animals from rosemary oil. In addition, it is said to help improve the memory.
Rosemary has small purple/blue flowers and is a member of the Lamiaceae mint family. It has an aroma similar to camphor with a bitter, astringent taste.
