Greek Seasoning

Greek Stuffed Peppers
Ingredients
- 6 large bell peppers, halved and seeded
- 2 Tbsp. olive oil
- 1 onion, chopped
- 1/2 lb. extra-lean ground beef
- Salt and pepper to taste
- 1 1/2 tsp. Spicely® Greek Seasoning
- 1 14.5 oz can diced tomatoes, drained
- 3 cups brown rice, cooked
- 1 cup Feta cheese, crumbled
Preheat oven to 400 degrees F. Lightly grease a baking sheet and put peppers, cut side down, on the surface. Roast in the oven for 20-30 minutes or until they are tender and skin begins to brown.
While peppers are roasting, heat the olive oil over medium-high heat and add onion. Cook onion until translucent, then add beef, crumbling well; add salt and pepper to taste. Drain well and blot with paper towels.
Add Spicely® Greek Seasoning to beef mixture; then add the tomatoes and rice. Mix well. Add the Feta cheese and mix well again.
In a baking dish, place peppers cut side up this time and fill with meat and cheese mixture. Cook for an additional 5-10 minutes or until heated through.

Gluten-Free Pizza Margherita
For the sauce:
- 1 Tbsp. olive oil
- 3 tsp. Spicely® Italian Seasoning
- 1-2 garlic gloves, pressed
- 1 small can of tomato paste
- 1 small can of tomato sauce
- 1 Tbsp. sugar
- Pinch of salt
For the pizza:
- Bob’s Red Mill Gluten-Free Pizza Crust plus ingredients to make crust
- 1-2 cups of shredded mozzarella cheese
- 2 Tbsp. basil cut into strips
- 1 cup of spinach coarsely chopped
- 1/2 cup small fresh mozzarella balls
- 1/4 cup grated parmesan
In a small saucepan, heat olive oil over medium-high heat. Add the Spicely® Italian Seasoning and garlic. Stir constantly until fragrant. Add the remaining ingredients. Turn down heat and simmer for 5 minutes. This makes enough for two 15-inch pizzas.
Prepare pizza crust according to package directions. Spread half of the dough on pizza stone using wet hands. Bake untopped crust 7-9 minutes until lightly browned. Remove crust from oven and spread on half of the pizza sauce. Sprinkle on the basil and spinach. Next, evenly disperse fresh mozzarella balls. Sprinkle on shredded mozzarella and parmesan to your taste.
Bake at 425 degrees for 15 minutes or until cheese is bubbly. |

Grilled Sea Scallops
Ingredients
Heat grill or grill pan. Mix garlic, lemon juice, and olive oil in a small bowl. Place 3 or 4 scallops on each skewer. Generously brush garlic and lemon mixture onto both sides of scallops. Sprinkle Spicely® Fish Grill and Broil Seasoning Blend on to both sides of scallops. Grill for about 3 minutes on each side or until scallops reach desired doneness. |

Curry Powder

Curry Chicken Salad
Ingredients
- 1/2 cup fat-free sour cream
- 1/4 cup fat-free mayonnaise
- 1 teaspoon Spicely® Curry Powder
- 1 garlic clove, pressed
- 1/4 teaspoon salt
- 1/2 cup finely diced celery
- 1 Granny Smith apple, cored and chopped
- 1/4 cup finely chopped red onion
- 1/2 to 1 cup finely chopped carrots, sweet bell peppers or other veggies of choice
- 2 cups diced cooked chicken
- 1/2 cup sweetened dried cranberries
- 12 Bibb lettuce leaves (about 1 head)
- Crackers (optional)
- 1/4 cup toasted sliced almonds, chopped (optional)
In a large bowl, combine sour cream, mayonnaise, Spicely® Curry Powder, garlic and salt; mix well.
Add celery, apple, onion, chicken and cranberries to sour cream mixture; mix well.
Place one scoop chicken mixture onto each lettuce leaf. If desired, sprinkle chopped almonds over chicken mixture. Roll up and serve immediately. You may also serve with crackers instead of lettuce.

Vegetable Seasoning

Potatoes Lyonnaise is the French version of home-fried potatoes, made with sliced potatoes, onions, garlic and vegetable seasoning.
Ingredients:
Preheat oven to 400 F.
In large oven-safe skillet, sautee onion in olive oil. Add garlic, parsley, white pepper and salt. Remove sauteed onions from skillet.
Melt butter in bottom of skillet. Place layers of cooked, sliced potatoes in skillet, alternating with sauteed onions. Heat potatoes in oven until light brown (about 10 minutes).
Try substituting Spicely® Organic Vegetable Seasoning for parsley. |

Lamb Backstraps with Zaatar
Rub lamb with garlic and olive oil. Next, generously coat lamb with Spicely® Zaatar Seasoning. Sear lamb on both sides in a hot pan to form a nice crust. Finish in 400 F oven for 15 minutes. Let rest 5 minutes, then slice. |
