Loaded Oatmeal Cookies

These cookies are fast to throw together and great for the whole family.

Serves: 12

Ingredients

  • 1 cup canola oil
  • 2 cups vanilla or plain greek yogurt (6 oz each)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups oats
  • 1 tsp Organic Ground Cinnamon
  • 1 tsp Organic Ground Nutmeg
  • 1 tsp Organic Ground Cloves
  • 1 cup raisins
  • 1 cup pecans
  • 1 cup coconut

Directions

  1. Preheat oven to 350. Lightly grease cookie sheet. In a large bowl mix together flour, baking soda, salt, and spices. Next stir in sugars until well blended.
  2. In a separate bowl, stir together greek yogurt, canola oil, and vanilla. Mix together baking soda and apple cider vinegar in a small bowl, then add into yogurt and oil mixture. Pour wet ingredients into dry ingredients and stir until thoroughly blended.
  3. Slowly begin to incorporate oats, coconut, raisins, and lastly pecans into cookie dough mixture stirring well after each addition. Once dough is well mixed place in refrigerator for at least one hour.
  4. Roll chilled dough into 1 inch balls and place about 1 inch apart on cookie sheet. Bake for about 20 minutes or until cookies appear golden brown.
