Chicken Shish Kabobs
Serves 5
2 1/2 lb. boneless skinless chicken breasts
1 ½ to 2 tablespoons. Spicely Chicken Kabob and Grill Seasoning
¼ cup olive oil
Green pepper (chunks)
Pineapple chunks
Cherry tomatoes
Mushrooms
Cut
chicken breast into 1 ½-inch chunks. Mix chicken and oil in a bowl.
Sprinkle with Spicely Chicken Kabob and Grill Seasoning and mix well.
Marinate at least one hour. Alternate on 11 inch skewers as follows:
Green pepper, chicken piece, pineapple chunk, cherry tomato and
mushroom. Grill until done. Serve over bed of rice. Makes approximately
5 skewers.
Chicken Kabob
Serves 3
INGREDIENTS
· 1 1/2 pounds skinless, boneless chicken breast halves - cubed
· 1 cup onion juice
· 1 tablespoons Spicely Chicken Kabob seasoning
· Salt to your taste
· 1 1/4 teaspoons crushed saffron threads
· 3/4 cup melted butter
DIRECTIONS
1. In a medium bowl, place the cubed chicken and onion juice. Mix in
Spicely Chicken Kabob seasoning. Completely dissolve crushed saffron
threads in the mixture. Cover and allow the chicken to marinate in the
refrigerator at least one hours, or overnight.
2. Preheat an outdoor grill for high heat and lightly oil grate.
3. Place the marinated chicken on skewers. Frequently brush with butter
while cooking on the prepared grill. Turning frequently, cook until meat
is no longer pink and juices run clear, or to desired doneness.
