Achiote is a shrub native to the tropical region of the Americas and Caribbean, and was brought to Southeast Asia by Spaniards in the 1600s. The shrub contains small heart shaped pods which contain the annato seed. Achiote powder is made from grinding the seeds and can be combined with water to create a paste. Historically, it has been used as a dye or paint due to its rich red coloration and adds a subtle earthy juniper flavor. It is currently used to color foods such as cheese, butter candy, and smoked fish. Use this powder to season meats, stews or fried foods.
To create a marinade, combine the powder with lemon juice, olive oil and salt. Achiote is thought to have anti-fungal properties. Ingredients: Organic Annatto, Organic Garlic Granulates, Organic Coriander, Organic Allspice, Organic Black Pepper, Organic Cumin, and Organic Cloves.
