However, unlike herbes de Provence or fines herbes, it is made of spices and is a headier blend and is often used for flavoring meat. Adding a warm and peppery note, this spice blend is great for hearty stews, marinading meat or even adding to pastries. Because it is comprised of fall spices like ginger and cloves, recipes using quatre ?_pices tend to be cold weather foods. These foods include sausages (such as boudin blanc), fancy terrines, pain dÍ_pices (gingerbread or spice bread), and roasted root vegetables. Use 1 tablespoon per 4 cups liquid when adding to a stew.
