Baked Tofu Bowl

Ingredients
For the tofu:
- 4 oz of tofu, sliced
- 1 tsp of garlic granulates
- 1 tsp of ginger powder
- ½ tsp of cayenne pepper
- 1 tbsp of soy sauce
For the roasted vegetables:
- 4 oz of sweet potato, sliced
- 2 bell peppers, sliced
- 1 tbsp of oil
- Salt and black pepper to taste
- ¼ tsp of garlic granulates
To assemble:
- Cooked brown rice
- Watercress
- Sesame seeds
Directions/Instructions:
1 - Add all pancake ingredients to a bowl and mix
2 - Season the tofu with garlic, ginger, cayenne pepper and soy sauce
3 - Roast the tofu in the oven for about 20 minutes; set aside
4 - In a roasting tray, add the sweet potatoes and bell peppers
5 - Drizzle with oil and season with salt, black pepper, and granulated garlic
6 - Roast the veggies about 30 minutes
7 - In a bowl, add brown rice and top with remaining ingredients
