Holiday Spiced Loaf Cake with Cream Cheese Frosting

Ingredients
For the loaf:
- 1 cup of unsalted butter
- 1 cup of brown sugar
- 3 eggs
- ¼ tsp of salt
- ¼ tsp of nutmeg
- 1 tbsp of cinnamon
- ½ tbsp of ginger
- ½ tsp of baking soda
- 1 tsp of baking powder
- 5 tbsp of maple syrup
- 1 ¾ cup of all-purpose flour
For the frosting:
- 10 oz of cream cheese
- 4 oz of powdered sugar
- 2 tsp vanilla extract
Top with:
- Crushed pecans
Directions/Instructions:
1 - Preheat oven to 350F
2 - Beat together the sugar and butter until soft and fluffy, about 2-3 minutes
3 - Add in the eggs, one by one, beating until combined
4 - Add in the salt, nutmeg, cinnamon, ginger, baking soda, baking powder, and maple syrup; beat until combined
5 - Add in the flour and mix until well incorporated
6 - Transfer into a prepared loaf tin and bake in a preheated oven for about 60-65 minutes or until a toothpick comes out clean when cake is poked
7 - Let cake rest until cooled
8 - For the frosting: mix all ingredients using a whisk until smooth
9 - After cake has cooled, frost and sprinkle with pecans
Note: to make this cake gluten free, substitute the all purpose flour with your favorite all purpose gluten free flour blend.
