Pumpkin Gnocchi

Prep Time: 10 minutes

Total Cook Time: 30 minutes

Servings: 2 servings


For the gnocchi (2 servings):

  • 10 oz of boiled potatoes
  • 1 egg
  • 5 oz of flour

For the sauce:


1 - Mash the boiled potatoes and add in the egg and flour. Mix nicely, until soft dough forms.

2 - Cut the dough in 4 pieces. Roll each piece into a long “snake.” Cut and shape your gnocchi. Boil in hot water for 1 minute then drain.

3 - In a hot pan, add butter and start by frying the cooked gnocchi. After 1 minute add in the pumpkin puree and season with garlic and rosemary. 

4 - Add in the water and mix for another 30 seconds.
