Salmon Wellington

Ingredients
- 1 oz of butter
- 1/4 red onion, chopped
- 1 clove of garlic, diced
- A handful of fresh spinach
- Salt and black pepper to taste
- 2 oz of cream cheese
- 7 oz salmon filet
- 1/2 tsp of garlic granulates
- 1/2 tsp of thyme
- 1 puff pastry sheet
- Egg wash
Directions/Instructions:
1 - In a hot pan, add butter and start by cooking the onions and garlic.
2 - After 2 minutes, toss in the spinach and season with salt and black pepper.
3 - Cook, stirring regularly, until spinach has wilted.
4 - Now add in the cream cheese and cook for another minute.
5 - Take it off the heat.
6 - Place the puff pastry sheet on a board and place salmon filet in the middle.
7 - Season the salmon with salt, black pepper, garlic and thyme.
8 - Cover with the spinach mixture.
9 - Close the puff pastry all around, score with a knife, do an egg wash and cook for 30 minutes at 375 F.
