Tahini Chicken Thighs w/ Root Vegetables

Ingredients
- 15 oz of root vegetables, chopped (carrots, parsnip, sweet potatoes)
- 15 oz of chicken thighs
- 2 tbsp of extra virgin olive oil
- Salt and black pepper to taste
- 2 tbsp of tahini
- 1 tsp of chili crushed
- 1 tsp of ginger powder
- 1 tbsp of sesame seeds
Directions/Instructions:
1 - Preheat oven to 375 F
2 - Add all ingredients to a baking dish and mix; top with sesame seeds
3 - Bake until chicken is cooked through and vegetables are beginning to brown, about 1 hour
4 - Serve
