HistoryThe traditional flavor of Cajun dishes started with the Holy Trinity (a combination of finely chopped peppers, onions, and celery sautéed in fat) or the Holy Trinity and the Pope (which adds garlic). Over time more flavors were added to the mix, and eventually a dried and ground version came about that allowed for Cajun flavors to be added with a simple pinch.
It all started in 1775 when the Arcadian people (French descendents) living in Canada got the boot from the British, who sent these refugees to Louisiana.
Upon arrival, the Arcadians, shocked by the extreme climate change, realized that the food they were used to eating was no longer available. They decided to embraced the challenge and created their own cuisine based on the area's unique local supply of edible goodies.
This resulted in a fusion food, the mixing of Arcadian preparation styles (which was already a fusion of French preparation styles) with Creole ingredients forming the now famous robustly delicious dishes known today as Cajun food.
