Braised Pork Chops with Fruit Relish

Total Cook Time: 50 minutes

Servings: 2 servings

 

Ingredients

    For the braised pork chops:

    • 2 pork chops, seasoned with salt and black pepper
    • ¼ onion, chopped
    • 1 cup of vegetable stock
    • 1 tsp of thyme
    • 1 tsp of rosemary
    • 1 tsp of paprika 

    For the apple relish:

    • 2 granny smith apples, chopped (or whatever fruit is in season - see notes)
    • 1 tbsp of brown sugar (can substitute with maple syrup or your sweetener of choice)
    • 1 tbsp of apple cider vinegar

           

            Directions/Instructions:

            1 - Pan sear the pork chops on each side for 3 minutes or until golden brown and set aside

            2 - Using the same pan, add onions and fry for 3 minutes

            3 - Add in the stock and season with thyme, rosemary, paprika

            4 - Put the pork chops back in, cover, and cook for another 30 minutes on medium heat

            5 - For the relish: add ingredients to a pot and cook for 5-7 minutes

            6 - When everything is ready, assemble the dish by topping the pork chops with the relish and enjoy!

             

            Note - relish will also work well with peaches, plums, pineapple, etc—try to use whatever is in season at the moment.
