Cajun Stuffed Peppers

Total Cook Time: 50 minutes

Servings: 3 servings (peppers)

Ingredients 

  • 3 bell peppers
  • 1 tbsp of extra virgin olive oil
  • Salt and black pepper to taste

For the stuffing:

  • 1 tbsp of oil
  • 1/2 red onion, diced
  • 1 carrot, peeled and diced
  • 8 oz of minced pork
  • Salt and black pepper to taste
  • 1/2 tsp of allspice
  • 7 oz of cooked white rice (season with salt and black pepper)
  • 1 tsp of garlic granulates
  • 1 oz of shredded cheese

      Directions/Instructions:

      1 - Cut the tops off the peppers and remove the stem with the seeds. 

      2 - Place in a baking tray and drizzle with olive oil.

      3 - Season with salt and black pepper and cook for 15 minutes at 375 F.

      4 - Meanwhile, in a hot pan, add oil and start by cooking the onions and carrots.

      5 - After 3 minutes you can add in the minced pork and season with salt, black pepper, and allspice.

      6 - Separate the mince with a wooden stirrer until small pieces form.

      7 - Cook until brown and add in the cooked rice.

      8 - Season with salt, black pepper, and garlic granulates.

      9 - Mix nicely and cook for 2-3 more minutes.

      10 - Take the peppers out and stuff with the rice and mince mixture.

      11 - Top with shredded cheese and cook in the oven again, for another 20 minutes at 375 F.
