Crispy Chicken with Zaatar Olive Rice

Ingredients


  • 1 tbsp of oil
  • 5 oz of minced chicken
  • Salt and black pepper to taste
  • 1 tsp of cumin
  • 8 oz of cooked basmati rice
  • 2 oz of green olives
  • 1 oz of baby spinach, chopped
  • 2 oz of feta cheese
  • 1 tsp of zaatar


Directions/Instructions:

1 - Cook minced chicken in a hot pan with some oil

2 - Season with salt, black pepper and cumin

3 - Cook until golden brown

4 - Place the cooked rice in a bowl. Toss in the olives and spinach. Mix nicely. 

5 - Top with the cooked chicken, feta and sprinkle with zaatar
