Quinoa & Veggie Stuffed Butternut Squash

Ingredients
- 1 butternut squash
- Salt & black pepper to taste
- ½ tsp oregano
- 7 oz cooked quinoa
- 1 tbsp oil
- 1 oz red onion, chopped
- 1 celery stalk, chopped
- 2 oz bell peppers, chopped
- 2 oz mushrooms, chopped
- 1 tsp oregano
- 1 tsp chili powder
- Salt & black pepper to taste
Directions/Instructions:
1 - Cut the butternut squash in half and scoop out the seeds
2 - Season the flesh of the squash with salt, black pepper, and oregano
3 - Bake at 375 F for about 1 hour, or until squash is fork tender
4 - In a hot pan, and oil and saute the onions and celery until softened
5 - Add in bell peppers, mushrooms, and seasonings
6 - Cook for about 5 minutes until vegetables are softened and starting to brown
7 - Mix in the cooked quinoa
8 - Stuff the butternut squash with the quinoa/vegetable mixture
