Using at Home
Arrowroot can be substituted for flour for gluten free baked goods.
When using arrowroot as a thickener, mix 2 tablespoons of arrowroot with a cup of water, and then add to the simmering sauce.

History
Archaeological evidence shows the cultivation of arrowroot as early as 7,000 years ago in the Americas. It was a food staple of the Arawak people of the Caribbean.
It was introduced in Europe around the 1700's, mainly in its role as an easily digestible food given to infants as a substitute for milk during weaning.
In the 1800's, arrowroot was used in paper making and was the choice of photographers for photo paper.
Today, arrowroot is cultivated in tropical climates around the world, although most of it comes from St. Vincent.
