Courgetti with Meatballs
Courgetti is thin ribbons of courgette used as a nutritious alternative to pasta or noodles. This flavorful dish has a healthy twist by using courgetti ( Zucchini ribbons ) instead of pasta. Seasoned with olive oil, dried oregano and salt, Pecorino cheese and fresh basil.

Ingredients
For the spicy meatballs:
- 10 oz of minced pork
- 1 tsp of dried oregano
- 1 tsp of garlic granulates
- 1 tbsp of finely diced red onions
- ½ tsp of salt
- ½ tsp of cumin powder
- ½ tsp of black pepper
- 1 egg
- 1 tbsp of all purpose flour
- 2 tbsp of olive oil
For the sauce:
- 1 tsp of garlic granulates
- ½ small red onion, finely chopped
- 1 small carrot, diced
- 5-6 leaves of fresh basil
- 7 oz chopped fresh tomatoes
- 1 tbsp of tomato puree
- 1/2 tbsp of honey
- ½ tsp of salt
- ½ tsp of black pepper
- 3 oz of water
- 1 tbsp of olive oil
Directions/Instructions:
- Mix the meatball ingredients in a bowl, until everything gets incorporated evenly.
- Shape small meatballs - about 10-12 will come out.

In a hot pan, with olive oil, start by frying the meatballs.
This will take about 10 minutes, brown them nicely on all sides.
For the sauce:
- In a hot pan, with olive oil, start by frying the onions and carrots.
- After 2 minutes you can add in the tomato puree, chopped tomatoes, garlic granulates and water.
- Season with salt, pepper, fresh basil and honey.
- Lower the heat and let it simmer for 10 minutes.
- Now the sauce is ready and can be added to the cooked meatballs.
- Serve over the courgette and finish it off with pecorino cheese and fresh basil.
Serve with: Courgette ribbons, seasoned with olive oil, dried oregano and salt, Pecorino cheese and basil.
