Cream Cheese and Spinach Cannelloni

Servings: 2-3 servings
For the stuffing:
- 1 tbsp of oil
- 4 oz of spinach
- Salt to taste
- 10 oz of cream cheese
- 1/4 tsp of nutmeg
- 1/4 tsp of black pepper
- 7-8 tubes of cannelloni
- 1 1/2 cups of tomato and basil sauce
- 5 oz of mozzarella cheese
1 - In a hot pan, add oil and cook the spinach.
2 - Season with salt and cook until wilted, about 2 minutes.
3 - Add the cream cheese to a bowl and mix in the cooked spinach.
4 - Season with nutmeg and black pepper.
5 - Stuff the cannelloni with the cream cheese and spinach mixture.
6 - Spread tomato and basil sauce in a baking tray.
7 - Top with the cannelloni.
8 - Top with more sauce and mozzarella.
9 - Cook in a hot oven, set to 375 F, for 40 minutes.
