Lentil and Sweet Potato Shepherd's Pie

Ingredients
For the mashed sweet potatoes:
- 8 oz of sweet potatoes, boiled
- Salt and black pepper to taste
- 1 tsp of rosemary
- 1 oz of butter
- 1/2 cup of milk
For the lentils:
- 1 tbsp of oil
- 1/2 red onion, chopped
- 1 medium carrot, peeled and cubed
- 1 oz of frozen peas
- 4 oz of cooked lentils
- Salt and black pepper to taste
- 1 tsp of thyme
- 1 cup of tomato and basil sauce
Directions/Instructions:
1 - Mash the sweet potatoes, with the mash's ingredients until smooth.
2 - In a hot pan, add oil and start by cooking the onions.
3 - Cook for a minute and then add in the carrots.
4 - Cook for another minute and toss in the frozen peas.
5 - After 3 minutes you can add in the cooked lentils and season with salt, black pepper, and thyme.
6 - Lower the heat and add in the tomato and basil sauce.
7 - Cook for another minute and take it of the heat.
8 - Transfer into a baking tray and top with the mashed sweet potatoes.
9 - Cook for 30 minutes, at 375 F.
