Lentil and Sweet Potato Shepherd's Pie

For the mashed sweet potatoes:

  • 8 oz of sweet potatoes, boiled
  • Salt and black pepper to taste
  • 1 tsp of rosemary
  • 1 oz of butter
  • 1/2 cup of milk

For the lentils: 

  • 1 tbsp of oil
  • 1/2 red onion, chopped
  • 1 medium carrot, peeled and cubed
  • 1 oz of frozen peas
  • 4 oz of cooked lentils
  • Salt and black pepper to taste
  • 1 tsp of thyme
  • 1 cup of tomato and basil sauce


    1 - Mash the sweet potatoes, with the mash's ingredients until smooth. 

    2 - In a hot pan, add oil and start by cooking the onions.

    3 - Cook for a minute and then add in the carrots.

    4 - Cook for another minute and toss in the frozen peas.

    5After 3 minutes you can add in the cooked lentils and season with salt, black pepper, and thyme. 

    6Lower the heat and add in the tomato and basil sauce.

    7 - Cook for another minute and take it of the heat.

    8 - Transfer into a baking tray and top with the mashed sweet potatoes.

    9 - Cook for 30 minutes, at 375 F.
