Pita Salad with Zaatar Tofu and Chickpeas

Ingredients

For the pita chips: 
  • 1 pita, cut into triangles
  • 1 tbsp of oil, for brushing
  • A pinch of salt
  • A pinch of granulated garlic

For the zaatar tofu: 

  • 3 oz of firm tofu, cut into cubes
  • 1 tbsp of olive oil
  • A pinch of salt
  • 1 tsp of zaatar

For the rest: 

  • Mixed leaves
  • Olives
  • Cherry tomatoes
  • Chickpeas

Directions/Instructions:

1 - Place pita triangles on a tray. 

2 - Brush with oil and season with salt and granulated garlic.

3 - Cook for 10 minutes,in a hot oven set to 375 F, until crispy.

4 - Season tofu with salt, zaatar and olive oil.

5 - Assemble the salad.
