Winter Squash & Mushroom Curry

Total Cook Time: 60 minutes

Servings: 2 servings

 

Ingredients

  • 1 tbsp of vegetable oil
  • 1 oz of onions, sliced
  • 2 oz of potatoes, chopped
  • 2 oz of squash, chopped
  • 2 oz of wild mushrooms
  • 1 tsp of curry powder
  • 1 tsp of turmeric
  • ½ tsp of cayenne pepper
  • ½ tsp of cumin
  • Salt and black pepper to taste
  • 1 ½ cup of coconut milk

     

      Directions/Instructions:

      1 - In a pot, add oil and start by frying the onions.

      2 - After 2 minutes, you can add in the potatoes and squash.

      3 - Cook for 5 minutes and then add in the wild mushrooms.

      4 - Season with curry, turmeric, cayenne pepper, cumin, salt and black pepper.

      5 - Cook for 5 more minutes and then pour in the coconut milk.

      6 - Lower the heat and gently simmer for 45 minutes.
