Tarragon, native to Central Europe, has a peppery anise flavor. A classic in French cuisine, it is found in many spices blends, such as fines herbes. Use tarragon to flavor vegetables, meats and in salad dressing.
To create a French inspired salad dressing, combine 1/3 cup olive oil, 1/4 cup white wine vinegar, 1 teaspoon lemon juice, 1 teaspoon tarragon, 1 teaspoon dijon mustard and 1 teaspoon salt.
Tarragon may help with insomnia and may be an antioxidant.
