Artichoke Carbonara Pasta

Ingredients
- 6 oz of cooked spaghetti
- 1 whole egg and 1 egg yolk
- 1 oz of grated parmesan cheese
- 2 oz of pancetta/bacon, cubed
- 2 oz of cooked artichoke hearts
- 1 tsp of Italian seasoning
- 1 tsp of chili crushed
- ⅕ cup of pasta water
Directions/Instructions:
1 - Mix the eggs with parmesan cheese and set aside
2 - In a hot pan, add the pancetta/bacon cubes
3 - Cook for 1 minute and then add in the artichoke hearts
4 - Cook for 2 more minutes, and add in the cooked spaghetti and season with Italian seasoning and chili crushed
5 - Cook for 1 minute and turn off the heat; add in the egg and parmesan mix and the pasta water
6 - Mix gently until all has been incorporated and sauce becomes silky smooth
7 - Serve and top with more parmesan and black pepper
