Summer Vegetable Fajitas

Ingredients
For the vegetables:
- 2 oz of bell peppers, cut into strips
- 2 oz of mushrooms, quartered
- 5 oz of zucchini, cut into strips
- 2 tbsp of extra virgin olive oil
- Salt and black pepper to taste
- 1 tbsp of lime juice
- 1 tsp of garlic granulates
- 2 tsp of oregano
- 2 tsp of paprika
- 2 tsp of cumin ground
To serve:
- Toasted tortillas (corn or flour)
- Sour cream
- Black pepper
- Fresh parsley or cilantro
Directions/Instructions:
1 - Preheat oven to 375 F
2 - Add vegetables to a baking tray and season
3 - Bake for 20 minutes
4 - When ready, serve with tortillas and top with sour cream, black pepper, and parsley
