Kofte with Tomato and Lime Sauce

Ingredients
For the Kofte (makes 16 small meatballs):
- 16 oz of minced beef
- ½ tsp of salt
- ½ tsp of black pepper
- 2 tsp of cumin ground
- 2 tsp of garlic granulates
- 2 tbsp of extra virgin olive oil
- 1 oz of breadcrumbs
- 1 egg
For the tomato and lime sauce:
- 1 tbsp of oil
- ⅙ onion, chopped
- 14 oz of diced tomatoes
- 1 tsp of salt
- 1 tbsp of sugar
- 1 tbsp of lime juice
- 1 tsp of garlic granulates
- 1 tsp of black pepper
- Zest of ½ a lime
To serve:
- Cooked basmati rice
Directions/Instructions:
1 - Preheat oven to 400 F
2 - Mix the meatball ingredients together and shape into 16 (1 oz each) meatballs
3 - Bake the meatballs for 30 minutes
4 - While the meatballs are baking, heat oil in a pan and start frying the onions
5 - After 2 minutes add in the diced tomatoes & season with salt, black pepper, sugar, garlic granulates, and lime juice
6 - Let it simmer gently for about 10 minutes and then add in the cooked meatballs
7 - Finish it all off with some lime zest
8 - Serve over basmati rice
