Smashed Pickle Salad

For the dressing:

  • 3 tbsp of sour cream
  • 1 tbsp of lemon juice
  • 1 tbsp of extra virgin olive oil
  • ½ tsp of salt
  • 2 tsp of black pepper
  • 1 tsp of garlic granulates
  • 1 tbsp of fresh dill, chopped

For the salad:

  • 4 oz of smashed dill pickles (use a meat tenderizer of the flat side of a knife)
  • 1 oz of celery, chopped
  • ¼ onion, sliced
  • Fresh dill




                            1 - Add all dressing ingredients to a bowl and mix well

                            2 - Place salad ingredients in another bowl and add in the dressing

                            3 - Mix well; top with fresh dill and serve
