Blackened Chicken Breast w/ Roasted Potatoes & Green Beans

                1 - Preheat oven to 375 F

                2 - Add potatoes to a baking dish and season with oil, salt, black pepper and garlic; roast until soft and browned, about 1 hour

                3 - In a hot pan, melt butter and add in the green beans

                4 - Season with salt, black pepper and garlic; cook green beans until tender, about 5 minutes and set aside

                5 - For the chicken: add butter to the pan and when it melts, add in the cajun seasoning

                6 - Cook on low heat for about 2 minutes to let the cajun seasoning bloom

                7 - Thoroughly coat the chicken breast with the cajun butter and return chicken to the pan

                8 - Cook the chicken on medium heat until cooked through, about 6-7 minutes on each side

                9 - Assemble all components and serve
