Broccoli Pesto Pasta

Total Cook Time: 10 minutes

Servings: 2 servings

 

Ingredients

For the pesto:
  • 5 oz of broccoli, cooked until soft
  • A handful of fresh basil
  • 1 oz of walnuts
  • 2 tbsp of extra virgin olive oil
  • Salt and black pepper to taste
  • 1 tsp of garlic granulates
  • 1 tsp of oregano
  • ½ cup pasta water

      For the pasta:

      • 1 tbsp of oil
      • 4 oz of cooked fusilli pasta
      • Salt and black pepper to taste

        To serve:

        • Fresh basil
        • Walnuts

                     

                      Directions/Instructions:

                      1 - Add the pesto ingredients to a blender and process until smooth

                      2 - In a hot pan, add oil and the cooked pasta

                      3 - Season with salt and black pepper

                      4 - Cook for 1 minute and then add in the broccoli pesto

                      5 - Cook for 2 more minutes and serve topped with fresh basil and walnuts
