Colcannon (Irish Mashed Potatoes)

Ingredients

For the potatoes:
  • 15 oz of potatoes, cut  into 1 inch pieces
  • 1 oz of butter
  • 1 oz of kale, chopped
  • Salt and black pepper to taste
  • 1 tsp of garlic granulates
  • 1 green onion sprig, chopped
  • 1 cup of milk
  • 1 tsp of oregano

      To serve:

      • A knob of butter

                   

                    Directions/Instructions:

                    1 - Cook the potatoes in boiling water until soft, about 25-30 minutes; drain

                    2 - In a deep pot, melt butter and add the kale

                    3 - Season with salt, black pepper, and granulated garlic

                    4 - Cook for 3 minutes and add in the green onion

                    5 - Cook for another minute and add in the milk

                    6 - Let simmer for about 5 minutes and add in the cooked potatoes

                    7 - Mash and season with salt, black pepper, and oregano

                    8 - Serve with a knob of butter on top
