Butter-Roasted Carrots

Total Cook Time: 45 minutes

Servings: 2 servings (4 medium carrots)

 

Ingredients

For the roasted carrots: 
  • 4 medium carrots, peeled and cut in chunks
  • 1 oz of butter, melted
  • ½ tsp of sea salt
  • 1 tsp of thyme
  • ¼ tsp of black pepper

For the crumble: 

  • 1 oz of goat cheese, crumbled
  • 1 tbsp of hazelnuts, chopped
  • 1 tbsp of fresh parsley
  • 1 tsp of crushed chili
  • 1 tsp of lemon zest

    Directions/Instructions:

    1 - Add carrots to a baking tray and season. 

    2 - Cook in a hot oven, set to 375 F, for about 45 minutes.

    3 - In a bowl, combine the crumble ingredients.

    4 - When the carrots are ready, serve and top with the goat cheese mix.
