IngredientsFor the roasted carrots:
- 4 medium carrots, peeled and cut in chunks
- 1 oz of butter, melted
- ½ tsp of sea salt
- 1 tsp of thyme
- ¼ tsp of black pepper
For the crumble:
- 1 oz of goat cheese, crumbled
- 1 tbsp of hazelnuts, chopped
- 1 tbsp of fresh parsley
- 1 tsp of crushed chili
- 1 tsp of lemon zest
1 - Add carrots to a baking tray and season.
2 - Cook in a hot oven, set to 375 F, for about 45 minutes.
3 - In a bowl, combine the crumble ingredients.
4 - When the carrots are ready, serve and top with the goat cheese mix.
