Citrus Glazed Sweet Potatoes

Servings: 3 servings
- 15 oz of sweet potatoes, peeled and sliced
- 1 tbsp of olive oil
- Salt and black pepper to taste
For the citrus glaze:
- Fresh rosemary
1 - Place potatoes on a baking tray and pour over olive oil.
2 - Season with salt and black pepper.
3 - Cook for 40 minutes, at 375F.
4 - Meanwhile, prepare the citrusy glaze.
5 - Add the glaze ingredients into saucepan and cook on a medium heat for about 10 minutes, until thick.
6 - After the 40 minutes of cooking, take the potatoes out and glaze - cook for 10 more minutes before the next glaze.
7 - Repeat 2 times.
