Crispy Chicken with Zaatar Olive Rice

Ingredients
- 1 tbsp of oil
- 5 oz of minced chicken
- Salt and black pepper to taste
- 1 tsp of cumin
- 8 oz of cooked basmati rice
- 2 oz of green olives
- 1 oz of baby spinach, chopped
- 2 oz of feta cheese
- 1 tsp of zaatar
Directions/Instructions:
1 - Cook minced chicken in a hot pan with some oil
2 - Season with salt, black pepper and cumin
3 - Cook until golden brown
4 - Place the cooked rice in a bowl. Toss in the olives and spinach. Mix nicely.
5 - Top with the cooked chicken, feta and sprinkle with zaatar
