Summer Stone Fruit & Herb Sangria

Ingredients
For the herb simple syrup (makes enough for 4 batches of the following recipe):- 1 ½ cup of water
- ½ cup of sugar
- 2 tsp of rosemary
- Some fresh mint leaves
For the sangria:
- ¼ of the simple syrup
- 2 apricots, sliced
- 1 plum, sliced
- 2 peaches, sliced
- 2 ½ cups of white wine (we like Pinot Grigio or Sauvignon Blanc)
- Ice
Directions/Instructions:
1 - To make the herb simple syrup, add all syrup ingredients to a pot and gently simmer until the sugar has melted
2 - Pour syrup through a sieve and let it cool down completely before using
3 - Add in all of the sangria ingredients plus ¼ of the syrup to a pitcher and mix well
4 - Can be enjoyed immediately; will taste even better after chilling in the fridge overnight
