Vegetable Pajeon (Korean Scallion Pancakes with Vegetables)

Ingredients
- 7 oz of zucchini, peppers and carrots - all cut into strips
- 3 tbsp of flour
- 1 tbsp of potato starch
- 1 tsp of baking powder
- 1 oz of scallions and chives, chopped
- Salt and pepper black to taste
- ½ garlic granulates
- 1 tbsp of extra virgin olive oil
- 1 egg
Directions/Instructions:
- Add all of the ingredients to a bowl and mix
- Cook pancake in a hot pan with oil for about 3 minutes on each side
