Taco Stuffed Sweet Potatoes

  • 1 sweet potato, cut in half
  • 2 tbsp of extra virgin olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper ground



  • 1 oz of cherry tomatoes, chopped
  • 1 tbsp of jalapenos, diced
  • 1 tbsp of red onions, diced
  • 1 tbsp of fresh parsley, chopped


  • Avocado
  • Lettuce


  1. Season the potatoes with oil, salt and black pepper
  2. Cook in a preheated oven, set to 375F, for about 45-50 minutes
  3. Meanwhile, in a hot pan, add oil and start by frying the minced beef
  4. Season with taco seasoning, salt and black pepper
  5. Cook for about 10 minutes and set aside
  6. Mix the salsa ingredients and set aside
  7. When the potatoes are ready, fluffen them up with a fork and top with the cooked minced beef, Pico de Gallo, avocado and lettuce. Enjoy!
