Taco Stuffed Sweet Potatoes

Ingredients
- 1 sweet potato, cut in half
- 2 tbsp of extra virgin olive oil
- 1 tsp of salt
- 1 tsp of black pepper ground
- 10 oz of minced beef
- 1 tbsp of taco seasoning
- 1 oz of cherry tomatoes, chopped
- 1 tbsp of jalapenos, diced
- 1 tbsp of red onions, diced
- 1 tbsp of fresh parsley, chopped
- Avocado
- Lettuce
Directions/Instructions:
- Season the potatoes with oil, salt and black pepper
- Cook in a preheated oven, set to 375F, for about 45-50 minutes
- Meanwhile, in a hot pan, add oil and start by frying the minced beef
- Season with taco seasoning, salt and black pepper
- Cook for about 10 minutes and set aside
- Mix the salsa ingredients and set aside
- When the potatoes are ready, fluffen them up with a fork and top with the cooked minced beef, Pico de Gallo, avocado and lettuce. Enjoy!
